My wife and I just bought all of our seeds for our garden. This is the first year that i'm gonna grow some jalapeno's and habenero. Think i'll fence it in this year to keep the rabbits out. Speaking of food. The best pickled eggs iv'e ever had was in Georgia. So if any of you southern boys got a good pickling recipe for eggs i'll take it. :thumbsup:

He's one for you:

Jalapeno pickled eggs
3/4 cup cider vinegar
3/4 cup water
1/2 cup plus 1 Tbsp white granulated sugar
6 cloves
2 jalapeno peppers, sliced in half lengthwise, seeds removed and discarded
1 teaspoon cumin seeds
1 bay leaf
1/2 teaspoon dry oregano
1/4 onion, sliced
1 garlic clove, peeled
6 hard cooked eggs**, peeled

I'm tired of fried fish for Lent. I got catfish in the freezer. Anyone got a good recipe that isn't fried?

CATFISH BAKED WITH CHEESE

6-8 catfish fillets, about 2 lb.
1/2 c. freshly grated Parmesan cheese (or from canister)
1/4 c. flour
Salt to taste
Freshly ground pepper to taste
1 tsp. paprika
1 egg, lightly beaten
1 tbsp. milk
1/4 c. melted butter
1/4 c. sliced almonds

Preheat oven to 350 degrees. Wipe the catfish dry. Blend together the cheese, flour, salt, pepper and paprika. Combine the egg and milk in a flat dish. Dip the fillets in the egg mixture and then coat with the cheese mixture. Arrange the fillets in one layer in a baking dish and pour the butter over all. Sprinkle with the almonds. Place in the oven and bake 20 minutes. 6-8 servings.
